Slurp!
Tonight I made the most delicious raw dish I’ve had yet! And it was really easy, though tools are required.
Zucchetti
You will need:
1 Spiral Vegetable Slicer (I used my brand new Benriner Cook Help)
1 Food Processor (I used my trusty Cuisinart Mini Prep)
1 Zucchini (large)
5 Roma Tomatoes
10 Mushrooms (your favorite variety)
1 Clove of Garlic
Fresh Basil
Cold-pressed Olive Oil
Unpasteurized Soy Sauce (optional)
Sea Salt
How to prepare:
First make the sauce:
Slice, gut and chop tomatoes, purée.
Chop up mushrooms, add to tomatoes, purée.
Optional: Marinate 1/3 of mushrooms in soy sauce the night before.
Chop up the clove of garlic, purée.
Pour 1 tablespoon of Olive Oil in, purée.
Chop basil, add to taste, purée.
Add sea salt to taste, purée.
Then, make the zucchini spaghetti:
Chop zucchini so it fits into whatever slicer you have.
Slice into super thin spaghetti like pieces.
Plate, smother in sauce & serve immediately!
This was so tasty I’ll totally eat it after we’re done with raw. It’d be especially tasty in the summer with a glass of wine out on the deck.

You have to serve it immediately so it doesn’t get watery.

This is also amazing with spaghetti squash. Shocker, I know.
